Holy cow I had a busy weekend! And wonderful! Except for rain in the afternoon on Monday, the weather cooperated and it was perfect this weekend!
So, I will fill you in on my activities!
Party pizza Friday, Water friends yard while they are out of town, Buy birthday present for party my daughter was going to, Cleaned the house, Some laundry, Go to the park with kids, Drop daughter off at party, Go out to dinner Sat. night with hubby and the boys, Plant and hang my topsy turvy tomato plants (so excited about that!)Rented Paul Blart Mall Cop (pretty funny!) Have kids friends over for sleep over, Meet my friend for a bagel Sunday morning, Go back to the park! Grill out a twice! Daughter walking in Memorial Day Parade, Picnic after parade for Jr. Girl Scouts and their families, Grocery Shopping! Cooking!
No wonder I didn’t have time to post anything! I have a lot to catch up on, here are some of my eats!
Jennie-O tukey brats. They aren’t cooked, so I boiled them first in beer and onions, then sauteed them in a pan. Only 170 calories for each one!
I also made chicken burgers using Purdue ground chicken. I used poultry spice and also added garlic and herb feta cheese into the meat. I turned out great!

These are grilled potatoes. I washed about 4 baking potatoes, kept the skin on, and put them in the microwave until the are part way cooked, but still firm. I cut them into big chunks, drizzled them with olive oil, and montreal grill seasoning. Cook them for about 5 minutes on each side on the cooler side of the grill so they don’t burn.
Another memorial day classic! BBQ chicken. I love when some of it gets charred!
I had some frozen shrimp, so at the last minute, I ran them under water to defrost, put them on skewers with salt and pepper and olive oil, and grilled them for 2 minutes each side.

My mom gets on my case all the time because I refuse to have pics taken of me. All the ones she does have are of a pillow covering my face or my head buried like an ostrich.

Oh, these pictures make me miss home and memorial day bbq. Everything looks so fabulous especially the bbq chicken and the grilled potatoes. Your kids looks so happy and healthy!

It sounds like you had a wonderful weekend! I like how you did the potatoes on the grill. We did “baked” grilled potatoes this weekend while camping, but since we were… well, camping… I couldn’t use the microwave like you did. That would have saved us a LOT of time….
