After a busy work morning, some friends at work and I went out for a nice lunch. We went to a place called Penny’s noodles. I went to the location in Oak Park, but I think there is one in Lincoln Park in Chicago. It’s really good. There were so many great choices, but I ended up with chicken fried rice.
I wish I would have asked for take home container and put half in right away, because I ended up eating 3/4 of it. It was delish!
Since I made pork tenderloin in my crock pot the other day and had a lot left over. Tonight’s dinner was pulled pork sammy’s with bbq sauce. I didn’t have any buns, so I used 1 slice of rye bread (70 calories) 3 oz. of the pork and some of my home fries.
For the fries, I just cut russet potatoes into wedges, sprinkled with paprika, salt and pepper and Pam cooking spray and baked at 375 for 25 minutes or so or until they are cooked through and browned.
And, since I didn’t work out at lunch I was going to just blow it off, but instead got on the elliptical at my house and did 30 minutes on level 5. Very hard! I think I’ve only done level one, but this level I was sweating buckets. And according to the monitor, it said I burned 360 calories?? I hope that’s right!
I can’t believe its another weigh in Friday!!
Despite the working out, and watching what I eat, I had another week of being EXACTLY the same! What’s up with that? But, I am not going to let that deter me, I feel great and I’m just going to have to be patient!
One thing I am going to change this week, is to plan an after dinner treat. I did have a few nights where I had a few too many oreo cookies, so that could have had something to do with it!
I used up my crock pot leftovers tonight, too! We’re really in sync this month, huh?! 🙂

I love the idea of asking for the to go box right away. I always eat to much when we go out.

Penny’s!!! I love that place – whenever I go to Chicago my family goes there because it’s by my cousin’s L station.
ack, sorry for the stubborn weight…But you’re feeling GREAT and healthy, that’s all that matters, really! AND you can whip up that crazy work out…you sure are mighty FIT!
