Jenn Cooks Terrific Taco Turkey Meatballs

I love these taco turkey meatballs! So many ways to serve them. I served them over rice, on a sub sandwich and in a calzone! Jenn Cooks Terrific Taco Turkey Meatballs need to be on your menu!

Great Meal Prep Idea!

These turned out WAY better than I hoped!

Makes 19 meatballs

Ingredients:

1 pound @perduechicken 98% lean ground turkey
7 baby bell peppers, chopped
1/4 small red onion, chopped
2 cloves garlic, chopped
2 tablespoons @lemasterfamilykitchen taco seasoning.
1 tablespoon @kerrygoldusa butter
1/2 cup panko bread crumbs
1/2 tsp. salt
1/2 tsp. black pepper
a few shakes of crushed red pepper flakes

In a bowl add all the above ingredients and mix well.

Divide into golf ball sized meatballs. I rolled out 19.

At this point, you could cook them all, but I only used 5 for my lunch. The rest, I placed raw, on a parchment lined cookie sheet and freeze until solid. Transfer to a Ziploc bag for later use.

Uncooked meatballs

To cook:

Using a small skillet, add 1 teaspoon olive oil, and a few spritzes of cooking spray. Add the meatballs and brown on all sides, cooking about 10-12 minutes total. You want the inside to be cooked through (no pink!) and if you have a meat thermometer it should read 165 degrees.

On the side I made delicious brown rice. Pro tip – did you know you can buy frozen brown rice? I love it, because I can take out just a little to make a side for myself.

Jenn’s Brown Rice Side

3/4 cup frozen brown rice (cook in the microwave in a bowl for 3 minutes)
1/4 cup frozen yellow corn
1/4 cup fresh cilantro
salt and pepper
2 baby bell peppers, chopped
2 green onions, chopped.

Add the heated up brown rice to the skillet with the rest of the ingredients, cook for 5 minutes, stirring occasionally.

Add the rice to a bowl, top with the meatballs, and I covered it with homemade jalapeño sauce. (see below for the jalapeño sauce recipe)

Thanks to Meagan @meggrowsplants – she posted her jalapeño hot sauce recipe and I ran to the store to get the ingredients.

Jalapeno Sauce Recipe!

This takes less than 30 minutes to make.

Ingredients:

8 oz. jalapeño (I had 7 large ones)
3 tablespoons olive oil
6 cloves of garlic
1 cup white vinegar
2 tablespoons sugar
2 tsp. kosher salt (if you use table salt – use 1 tsp.)

In a skillet add the olive oil and jalapeños- I took half the seeds out.

Cover the pan, cook 8 minutes on low heat.

Add the garlic. Cover and cook 3 minutes.

Next add 1 cup vinegar, the salt and sugar. Cover again and cook for another 10 minutes on the lowest heat.

Let cool and blend. Store in a jar 🤩

Good on tortilla chips – I also want to try it on grilled chicken, a breakfast burrito, on roasted potatoes- so many options!
