
It’s my birthday today!
And as I have mentioned before I have a
twin sister Beth so it’s her birthday too. (She’s ½ hour older than me!)
I always remember this card she gave me (or I gave her?) and it went like this:
“We’re birds of a feather, and I guess you know why, it seems you were born on the same day as I! So in honor of us here’s what we should do, sing Happy Birthday to me, Happy Birthday to you!”Pretty much every time we were together and we would see tiny twin babies, or small twin kids, we would always say to their parents “they are going to have the best life ever!”
It is pretty awesome to be a twin.
We’ve been the best of friends, never fight for more than like a minute, and talk pretty much by phone or e-mail every single day (multiple times a day!)
In high school, we switched classes on April Fools Day.
She actually took a final for me our senior year in high school in Math (and got an A!).
She also finished a math class for me in college when she came to visit for spring break!
I just gave her my i.d. card and away she went.
When we got our first apartment together when we were 19, I went to Blockbuster to get an account.
I didn’t have a credit card then, so I couldn’t get an account.
I knew my sister had one, so I went back to our apartment, changed my clothes, asked her for her i.d. and credit card and went back to get a Blockbuster card! Now of course we don’t do things like that anymore, but we had some fun times with it!
So, today, I thought I would post one of my favorite recipes from the last year. I have made these a dozen or so times over the last year, and it’s helped me keep away from the bakery by my office on more than one occasion! The recipe is for Graham Cracker Muffins and it comes from Celine at www.havecakewilltravel.com. The best part is that you use no eggs, or margarine, or butter, or oil for that matter!
- 1/2 cup all purpose flour
- 10 graham cracker sheets (I package) ground or smashed into small pieces
- 1 cup soy milk (I used skim milk)
- 2 1/2 tsp. baking powder
- 1/2 cup sugar
- 2 1/2 TB. ground flax meal mixed with 3 TB warm water(this replaces the egg)
- 4 TB. chocolate chips
In a mixer, mix together the flour, crushed graham crackers, sugar, baking powder. Next add the milk, flax meal mixed with water, and chocolate chips. You can make mini muffins from them instead of 6 jumbo muffins. For each mini muffin it is 62 calories, 1.25 grams of fat and .7 grams of fiber. I used a mini muffin tin I bought from Pampered Chef, it makes 24 mini muffins. It was kind of nice just to have a bite of something sweet after a meal! If you choose to make 6 jumbo muffins, then each muffin would be 251 calories, 5 fat and 2.8 fiber…Much better than the 600-700 calorie varieties made at a bakery!!
