After a full day yesterday getting ready for my son’s 11th birthday party, which included 5 of his friends, my 13 year old and his friend, our block party + playing kick ball at the park + them staying up way too late, I need a nap!
So, I’m going to make this one short today!
This may not look great, but it was tasty and kept me full all morning.
At the base was a Thomas Lite English Muffin, topped with 1 egg + 2 egg whites, 1 Target chicken sausage, cut up and cooked with the eggs, with provolone cheese on top. 8 pts.
And, of course, I love my stir fry’s! This was 1/4 cup rice, 1/4 cup edamame, 2 carrots, 1/4 red onion, 3 oz. of chicken, 2 TB. classic stir fry sauce (only 25 calories per Tablespoon!)
5.5 pts.
Now, I am off to take a nap!! Hope everyone has a great rest of their weekend!
