I hope everyone had a great weekend! I had a great Sunday with my daughter at a pumpkin farm. It was also going to be apple picking, but all the apples were picked, so my vision of making apple pies, and things with apples was foiled! Oh well, the girls had great fun, and they all got pumpkins!
I was happy I made my beef stew in the crock pot so when we got home at dinner time it was all ready. I just diced up 3 stalks of celery, 4 carrots, 5 medium potatoes, half a white onion, a few cloves of garlic. Add that to the crock pot and add 1 lb. of beef stew meat, (which I browned in a skillet first) and add 3 (12 oz) cans of V-8 juice, salt and pepper to taste, and 2 tsp. basil, and cook it on low all day of on high for 4-5 hours. So good!
For breakfast I made one of my new favorite things, egg stuffed baked potato.
First, I cooked a baked potato in the microwave. I cut off the top and scooped out most of the insides.
In a small skillet, add 1 slice of turkey bacon and cook that until it’s done. Add the cooked potato, 1 egg, 1 egg white, 1 green onion (chopped) and cook until the egg is done.
Add the egg mixture back into the hollowed out potato and sprinkle the top with a little cheese and it’s done! This was such a filling breakfast and it takes no time to put together.
