For the longest time, I would read in health and fitness magazines, books, websites, etc… to add more fruits and veggies to your diet and not only will it fill you up, but the calories are so much less than eating a granola bar, protein shake, 100 calorie packs of junk. Today I made a fabulous lunch. It’s one of my favorites. I didn’t rally realize until I started chopping up my veggies just how much food I could eat with so little calories. I chopped up 1 clove of garlic, 1/4 red onion, broccoli slaw, sugar snap peas and carrots.
- carrots: 30 calories
- sugar snap peas: 35 calories
- broccoli slaw: 25 calories
I sauteed the veggies with the garlic and red onion. Added the other veggies, added 2 ounces cooked spaghetti and Trader Joe’s stir fry sauce and I was in heaven! Garnish with green onions if you like!
