I cooked the pasta, and set it aside. In a skillet I sprayed Pam cooking spray and turned the skillet on medium to heat up. In a separate dish, I put corn meal and Italian spices (I didn’t have bread crumbs). I dredged each chicken tender into the corn meal, and placed it in the skillet. I cooked the chicken tenders about 3.5 minutes per side, or until cooked through. To assemble, I measured out 1 cup of pasta, place 2 chicken tenders on top, poured a 1/2 cup of the sauce and 1/2 ounce of mozzarella cheese, and a sprinkle of Parmesan cheese.
I had 2 ounces of chicken with the corn meal breading – 113 calories
I cup whole wheat pasta – 210 calories
1/2 cup sauce 60 calories
1/2 ounce mozzarella cheese – 40 calories
423 calories for the whole meal! It was a big portion and I felt like I had a fancy dinner!
One thing I like to do is save money on groceries. I know I’ve mentioned it before, but if you have an ALDI foods near you and have never been, please check it out. I’ve attached a link to their “Fit and Active” line of foods which are healthy and can fit into anyone’s eating plan.
I would guess I save half per week of what I would spend at a regular chain store like Jewel or Dominick’s in the Chicago-land area! Gotta love that, and with their line of Fit and Active foods, I can still eat great!

Maybe our Aldi is small, but I can’t do our regular grocery shopping there – it’s way too limited in items! I do like running and stocking up on cheaper things we don’t need every trip (meats, flour, etc) — they have AWESOME deals!
I have had some of the Fit & Active foods…yes, they are a great deal!
Chicken Parm is probably one of my favorite meals, and I to have not made it in a long time…looks yummy!
