Easy breakfast – frittata

I woke up this morning starving!  I wanted a deluxe breakfast, but with getting ready for work, making lunches for the kids to go to school, finding socks that match etc… I thought I was going to have to resort to cereal.  I opened my fridge, hoping for some inspiration.  Then I thought of it!  I could make a fritatta!  I had eggs, feta cheese and potatoes, and that’s all I needed.  I cut the potato in half, threw it in my magic bullet, and chopped it up.  I sprayed a small skillet with Pam and threw the potatoes in there.  Next, in a separate bowl, I whisked 1 egg, 2 egg whites, a splash of skim milk and salt, pepper, and crushed red pepper flakes.  Once the potatoes started to brown, I poured the egg mixture on top.  At this point, you can let the bottom set, then flip and cook the other side.  I decided just to scramble it all up.  At the very end, I threw in 1/2 an ounce of feta cheese.  I put it into a container and since my commute to work is about 5 minutes, it was nice and warm when I ate breakfast!  It was very filling and yummy.  I cut up an apple to have on the side and it took me at least 1/2 an hour to eat the whole thing.  (I eat kinda slow!) So even when you think you don’t have time to make something deluxe, sometimes you do!!
