Dinner Wed. night

  • I really didn’t have much of an idea of what to make for dinner. So when I got home, I cooked up a few huge chicken breasts with Mrs. Dash lemon pepper seasoning.  Once it was done, I let it rest for about 5 minutes, and then just carved each one so it made many slices.  I also cooked Ore Ida frozen hash browns to go on the side.  Each serving of hash browns has only 80 calories, and I cooked it with Pam.  I was going to have a spinach salad on the side, and an apple, when I thought, why don’t I put it all together?  So I had about 3 handfuls of fresh spinach, 3 ounces of chicken, 1 tablespoon of flax seed, 1 small golden delicious apple, some baby carrots, and 2 tablespoons of Paul Newman’s Light Honey Mustard Dressing.  ( I served the potatoes on the side!)  It was so good and it took me forever to eat, which I love, since it seems like I got a lot of food! It actually turned out great!
