This recipe actually comes from the Biggest Loser Cookbook. If you haven’t checked one of their cookbooks out, go to your library and I’m sure they will have a few. Then copy your favorite recipes and return the book!
It was super easy to make and this sandwich kept me full ALL morning.
I used Thomas’ lite English Muffin
1 egg “fried” in Pam cooking spray
1 slice swiss cheese
1 breakfast sausage
Here’s the recipe for the turkey sausages:
Turkey Breakfast Patties
Fennel seeds lend zip to these very low-fat, tasty sausage patties
12 ounces lean ground turkey breast
1/4 cup onion grated (my sister Biz won’t add this!)
1/4 cup fat-free egg substitute
2 tablespoons seasoned bread crumbs, low-fat
1/4 teaspoon fennel seeds finely chopped
In a bowl, combine the turkey, onion, egg substitute, bread crumbs and fennel. Shape the turkey mixture into 4 patties.
Coat a large nonstick skillet with nonstick spray and warm the skillet for 1 minute over medium heat. Add the patties and cook until they are browned and no longer pink, about 5 minutes on each side.
Yield: 4 Servings; Serving = 1 patty
NUTRITIONAL VALUES Calories: 112
Fat: 2 g
Carbohydrates: 6 g
Protein: 17 g
Now you wouldn’t think you were on a diet eating this breakfast!

On another note, did you watch Biggest Loser this week? It always boggles my mind how people who just a few short months ago were huge and here they are running a marathon AND totally kicking my marathon time!!!
When Ada ran it in 4:38 where just 4 months ago she was 70 pounds heavier I could not believe it. And Patrick who was 400 pounds ran his marathon a whole HOUR faster than my time!! Super impressive that they can do that. I was super proud of all of them, especially Elizabeth with her asthma finishing it in 7.5 hours.
So who do you think is going to win Biggest Loser?
I think Patrick is going to do it, although Frado has come a long way too!
Oh, that looks great! I will have to check out on those cookbooks, haven’t been to the library in awhile. I just finished this weeks BL. Ada is a rock star! Though I kinda hate this stage of the show, because all the contestants start weighing less than me. 🙁

I make stuff out my Biggest Loser cookbook all the time. They really do have great recipes that are low fat/low cal but super tasty!

I love the library trick. I do this all summer. It’s a great way to get some fabulous recipes without breaking the bank! This sounds like a delicious breakfast sandwich!

Breakfast sandwiches are my favorite – in fact, I had one for dinner one night this week! I put 3 eggs on mine though, lol. I love that you made your own turkey sausage – yum!
Yum! I love that it has fennel in it and so smart to GRATE onion so you get the flavor vs. the intense flavor of a diced onion. Smart! Thanks for sharing – I want to try this!
Like the rest I think that looks great! As for Biggest Loser it seems to be a hit or miss thing for me. I’ve maybe watched 5 of the 10 seasons. Thinking I watch when I’m mentally into losing weight and don’t when I’m not. Yeah you guessed it I haven’t watched one episode this season.
I could go for one of these guys about now! The turkey sausage looks delicious!
