I love making things that are super simple. I use my crock pot all year round, but in the summer it can be used even more so you don’t have to heat up your kitchen with a hot oven. I make this before I go to work, turn it on, and when I get home dinner is ready!

Ingredients
- 4 chicken breast halves - I've thrown them in frozen too!
- 1 large jar of your favorite salsa - I love Paul Newman's medium chunky salsa
- 1/2 can of chicken broth
- 1 tsp. cumin
- salt and pepper to taste
Instructions
- I have done this recipe with frozen chicken breasts or fresh - both work just fine.
- Place the chicken breasts in the bottom of the crock pot.
- Add a large jar of your favorite salsa (I love Paul Newman's)
- Add the chicken broth and spices.
- Cook on low 6-8 hours.
- Shred the chicken with 2 forks.
- Serve over rice or noodles, make tacos, on a baked potato - lots of possibilities!
This takes about 2 minutes to make in the morning before leaving for work and makes weeknight meals super easy and quick!
