Chicken tortilla soup

Sometimes when I go to the store, I don’t actually have a plan of what to make, I just get stuff and will figure it out later. I bought 3 packages of boneless chicken breasts, and I was thinking about what to make, when I realized I had everything to make chicken tortilla soup. From start to finish…20 minutes!
Ingredients:

3 boneless, skinless chicken breasts, cut into bite size pieces
1 TB. olive oil
7 cups water
1 green pepper, diced
1/2 white onion, diced
1 can corn, with liquid
1 can Campbell’s chicken tortilla soup
2 tsp. ground cumin
2 tsp. ground chili
1/2 box of your favorite pasta
7 tsp. powdered chicken stock
splash of worchesterchire sauce
tortilla chips for crushing on top

I took a big pot, added the olive oil and browned the chicken on all sides. Then add all the rest of the ingredients, except pasta and bring to a boil, add the pasta, cook until done. Ladle into bowl, put crushed tortilla chips on top (optional).

It was so good! This makes 8 cups, each cup is 190 calories, and 3 grams of fat!

So, on the exercise front, its DAY 3 of straight exercise! That’s more than I have done in the last few months. I walked home from work again, 30 minutes, brisk walking.

I decided to do exercise TV on demand and I chose this:

Billy Blanks Jr. Cardioke! It was only 25 minutes, so I thought that would be good. I started out ok, but after about 10 minutes, I couldn’t stop laughing and then he gets to the part where he says “Are you ready to sing?” All of a sudden the words come on the screen and he starts singing! I couldn’t stop laughing, plus my 12 year old son was in the room, and the dance moves were kind of racey, so I swithced and did a Jillian Michaels work out for 30 minutes! I was able to do about 90%, so that was awesome!

Total calories for the day: 1440 🙂
