Chicken Fried Brown Rice
Okay, who watched The Biggest Loser last night? I knew there was going to be voting, and I was hoping Vicky would be in the bottom 2 so that she wouldn’t be in the final three. Michelle is doing great though, losing 9 pounds in week 12? That’s insane. I can’t wait to see what happens next week! The recipe I am posting today is appropriate because it comes from The Biggest Loser cookbook. I got the book from the library and just copied the recipes I wanted. Sometimes I buy a cook book and I may only make a few things from it. I love fried rice, and this version will not make you fat!
Chicken Fried Brown Rice
8 oz boneless skinless chicken breast, cubed
1 tsp Mrs. Dash Chicken Grilling Blend
1/2 tsp black pepper
1/2 tsp garlic powder
Cooking spray
1 Tbsp garlic, minced
1 med onion, chopped
1 med bell pepper, chopped
1 med carrot, chopped
2 c broccoli, chopped
2 c string beans
1 c pea pods
1 c bean sprouts
2 cups brown rice, cooked
8 Tbsp low-sodium soy sauce
1/2 cup Egg Beaters
1. Season chicken with Mrs. Dash, pepper, and garlic powder. 2. Spray wok or large skillet with cooking spray. Add minced garlic, and brown chicken over medium-high heat. Cook 3-5 minutes. 3. Add all veggies to wok and begin to stir-fry. 4. Add brown rice and soy sauce, and continue to stir-fry. 5. Add Egg Beaters, and stir-fry until egg is cooked. 6. When veggies are at desired tenderness, remove from heat.
Makes 4 Servings Per Serving: 270 cal, 24 g pro, 41 g carb, 2 g fat, 0 g sat fat, 35 mg chol, 8 g fiber, 1,190 mg sodium
You can buy the Trader Joe’s vegetarian egg rolls to go with it, they clock in at only 140 calories each! I love this recipe because you get so many of your veggies in!
