My 7 year old daughter was home sick today, with only two days left in the school year! I knew she wasn’t doing well when she was going to miss a picnic and going to an ice cream shop! But, she’s feeling better now, so that’s good!
With an unexpected day off of work, and also a sick cat in our house that had to be taken to the vet today, its been a crazy week.
So with more time on my hands, I figured it was a great time to finish making gifts for my three kids teachers, after school program teachers, crossing guard, etc…
I knew I was going to make a few batches of cookies. They turned out really good and are now wrapped nicely so I won’t dig into them!
Basically I started with the tollhouse cookie recipe, but added ground flax seed, a scoop of peanut butter, chopped chocolate instead of chocolate chips and a few cinnamon chips. I made them small too!
And since all of my kids teachers are ladies, I can use my skill of making jewelry and make earrings for them. They have a tough job and I couldn’t have been happier with them this year. Here are a few pairs I made today:
Since I was wiped out from the day, I decided to make an easy Lemon Pepper Chicken and baby potatoes with asparagus on the side.
I just sliced up 3 big chicken breasts and sauteed them in a pan with a little olive oil and lemon pepper seasoning.
For the potatoes, I just cooked them in the microwave. I have a setting for baked potatoes, so I don’t have to put a time in. Then I dumped them in the same skillet I cooked the chicken in. It still had a little olive oil in the pan + the lemon pepper seasoning, and I just browned them in the pan. They turned out really good.
I have left over potatoes, so I am thinking I might have to have hash browns and eggs for breakfast tomorrow!

Those cookies really are beautiful — esp with the cracks, and they are perfectly shaped! I also love that you added flax seed, a great way to add some hidden nutrition in those cookies. And of course, beautiful earrings!
