- 1 egg, 2 egg whites
- 5 ounces cooked potato
- 1 small orange
- 2 slices high fiber bread
- 1 tablespoon sugar free grape jelly
This is what I call a totally deluxe Sunday morning breakfast! Sometimes the hardest part of losing weight is going crazy over the weekend. It doesn’t have to be like that when you don’t think of it as actually dieting but eating healthy. Believe it or not, this whole breakfast was only 432 calories, 6.4 fat and 14.3 grams of fiber. This is the bread I used, it is so yummy and has 4 grams of fiber per slice!
I was so full from this breakfast that I had a very light lunch. So you can enjoy things like this and not “blow” your diet. The potatoes I used came from a can. I never knew this even existed until a few months ago. The best part is, they have a long shelf life, so they won’t go moldy if you don’t use them like fresh potatoes and they are cheap! Potatoes are great and very filling. After they were cooked, I measured 5 ounces which has the calories listed below. It was a lot of potato! I just cooked it in a skillet with Pam cooking spray until they were kind of crispy. So next weekend, if you want to make a great breakfast, try this one!
