After looking at a bunch of recipes, one popped out at me. It was an individual breakfast bake made in a ramekin.
I used:
1 small potato, sliced
1/2 chicken pesto bratwurst, sliced (from Trader Joeβs)
1 oz. cheddar cheese
1 egg + 2 egg whites
salt and pepper to taste
I sliced a raw potato, put it in a microwave dish and covered it with water and cooked it on the baked potato setting on my microwave
Next, I took a ramekin, sprayed it with cooking spray. I took a few of the cooked potatoes and put them on the bottom, then a few of the slices of chicken pesto bratwurst, then some cheese, and kept making layers until I was out of ingredients. (Save some cheese for the top)
In a separate dish, add 1 egg + 2 egg whites + 1 TB. water and scramble it all up. Pour over the top of the ramekin. Add the remaining cheese on top. I baked this for about 20 minutes at 375. You will know when its done because the eggs will be set.
This whole dish was 350 calories!!
The next thing I made for lunch today was kicked up Ramen Noodles!
Instead of using the spice packet that comes with it, I decided to use 1/2 the block of ramen noodles, with 3 cups of chicken broth. Did you know 3 cups of chicken broth is only 15 calories??
So in a pot, I added chopped garlic, red onion, the chicken broth, handful of shredded carrots, a handful of broccoli slaw, sugar snap peas, 3 leftover pot stickers, and 1 TB. of Saigon Sizzle stir fry sauce.
I brought that up to a boil, then added the ramen noodles, and simmered that for a few minutes until the noodles were cooked. AMAZING!
This HUGE pot is only 300 calories!! And a great way to get in a ton of veggies! I canβt wait for lunch!
That is way too decadent looking to be just 350 calories! This is fabulous!

Soups are a great way to pack in a lot of food for little calories – my mom eats soups everyday when she’s watching her weight.

Wow!! I looove the b&b recipe because i recently came back from my trip to a b&b and they had the BEST baked omelete ever, which i totally recreated as well. Great minds think alike huh?!?!? Thank you for sharing the website cuz I’m definitely gonna check that out now. π

and mm….how can you say no to ramen? I used to crunch on it uncooked like crackers when I was young. Now I try to abstain from them, but once in a while, it is pure indulgence.
I could really go for that breakfast bake. I made a vegetarian version once only to realize I did not have enough ramekins for the group so I just combined everybody’s and made it in a 9×13 pan.
I see these individual baked eggs and wonder why I forget to make one for myself. They are so yummy. I like your version of kicked up Ramen. I don’t usually like the flavor packets and all their MSG glory. So your alternative is great!

Great idea! Sounds like the perfect and simple breakfast dish. Unfortunately the B&B I have stayed in serve fruits and pastries nothing ever cool.
