Bed & Breakfast Egg bake + Kicked up Ramen

Yesterday I was thinking about all the wonderful things you eat when you stay at a bed and breakfast. I thought, why can’t I pretend I’m staying at a B&B? So, I decided to look up some bed and breakfast recipes to see what I could make that would be deluxe, but I could make it healthier. I went to www.bedandbreakfast.com and they had thousands of bed and breakfast recipes! This Bed & Breakfast Egg bake sounded awesome!

After looking at a bunch of recipes, one popped out at me. It was an individual breakfast bake made in a ramekin.

I used:

1 small potato, sliced
1/2 chicken pesto bratwurst, sliced (from Trader Joe’s)
1 oz. cheddar cheese
1 egg + 2 egg whites
salt and pepper to taste

I sliced a raw potato, put it in a microwave dish and covered it with water and cooked it on the baked potato setting on my microwave

Next, I took a ramekin, sprayed it with cooking spray. I took a few of the cooked potatoes and put them on the bottom, then a few of the slices of chicken pesto bratwurst, then some cheese, and kept making layers until I was out of ingredients. (Save some cheese for the top)

In a separate dish, add 1 egg + 2 egg whites + 1 TB. water and scramble it all up. Pour over the top of the ramekin. Add the remaining cheese on top. I baked this for about 20 minutes at 375. You will know when its done because the eggs will be set.

This whole dish was 350 calories!!

The next thing I made for lunch today was kicked up Ramen Noodles!

Instead of using the spice packet that comes with it, I decided to use 1/2 the block of ramen noodles, with 3 cups of chicken broth. Did you know 3 cups of chicken broth is only 15 calories??

So in a pot, I added chopped garlic, red onion, the chicken broth, handful of shredded carrots, a handful of broccoli slaw, sugar snap peas, 3 leftover pot stickers, and 1 TB. of Saigon Sizzle stir fry sauce.

I brought that up to a boil, then added the ramen noodles, and simmered that for a few minutes until the noodles were cooked. AMAZING!

This HUGE pot is only 300 calories!! And a great way to get in a ton of veggies! I can’t wait for lunch!
