I had no idea what to make for dinner last night. I knew I had chicken but wanted to make something different. In the end I made a balsamic marinade to pour over the chicken and baked it for 30 minutes at 350 degrees. It came out fantastic!
For the marinade:
2 TB. Canola oil
4 TB. blasamic vinegar
salt and pepper
1 tsp. of oregano
1 TB. honey
1/4 cup hot water (to kind of melt the honey)
The chicken breasts I bought were HUGE! So, I sliced them in half so that they would cook faster.
In a 9×13 dish, I placed the chicken, added the marinade and a few cloves of whole garlic and baked it at 350. for 30 minutes, or until it is done.
On the side I served asparagus, and new potatoes which I quartered and cooked in a skillet with Pam cooking spray for about 25 minutes, stirring often. I added salt, pepper and paprika to the potatoes.
The whole meal turned out so much better than I expected. I love when that happens!

yum! i love when people post recipes and i already have all the ingredients in my kitchen! i just might make this tonight. do you think it would be good leftover if i made an extra piece for tomorrow’s lunch?

You could make a chicken wrap with the chicken, some veggies, a little cheese.
