I’ve made various kinds of salsa in the past. I’ve made a roasted version here, and attempted a version of my sister’s salsa here.
Yesterday when I was at the store, I picked up some more tomatillos, a big poblano pepper, a white onion, some garlic and headed home to make another batch of salsa. It was hot out yesterday, and I didn’t want to turn the stove on, so I got out my skillet and added everything to the pan.
Ingredients:
Tomatillos
1/2 large white onion
4-5 cloves of garlic
1 Poblano pepper
juice of 1/2 lime
I just added a few teaspoons of Canola Oil, and threw everything into the skillet. I turned the heat on medium and just cooked the veggies on all sides for about 15 minutes. Some parts got a little browned, but I was OK with that!
I removed the stem from the Poblano pepper, and the paper from the garlic, but other than that, I threw everything into the blender.
I also added a few teaspoons of Tapatio picante sauce. And this is how it turned out:
Since it’s kind of warm, I put some into 2 bowls and stuck it in my freezer for about 15 minutes to cool it off.
It was so good! And the best part is it makes so much. I’m seriously thinking about canning some of this for gifts at Christmas!

So check out the shoes my kids picked. My oldest son is going to be a Freshman in high school, my middle son is going into 7th grade and my daughter is going into 3rd grade. It’s going to be a crazy year with 3 kids in 3 different schools, we’ll see if I survive!
I should be lucky I have a few more weeks before school starts. 67 Chicago Public Schools have adopted a YEAR ROUND school and they go back to school on Monday!
Year round students get 6 weeks off during summer, 2 weeks off at Christmas and 2 weeks off during Spring break. It’s all in an effort to keep kids off the streets and keep them safer. Which I am all for that! Some areas in Chicago are pretty rough and dangerous!

So how many tomatillos did you use? I’ve never cooked with them before. Do you chop the tomatillos before throwing them in the skillet? I so want to make this, my husband would LOVE it. Thanks!
Hi Debbi! In answer to your question, I used 10 tomatillos. I did not chop them up in the skillet, I just threw them in the skillet whole. Then after they have cooked for about 15-20 minutes, then dump it all in the blender, seeds and all!
*I did take the stem off the Poblano pepper and the skins off the garlic, but other than that, it’s super quick and easy!

Great job on the shoes and you know about the Reduced Taxes right now for school supplies and clothes, right? (Only in IL I think.) And I go back tomorrow which is sad but hey, it’s time. It’s always fun to be off in the summer but its time to get back to a more normal routine and frankly to stop spending so much money! lol
I wish all three kids a great school year. Tell Paul to look for Bree. They probably won’t have any classes together but hopefully will see each other once in awhile.

Awesome salsa! I’ve never thought to make my own tomatillo – but we use it all the time. I’ll have to give this one a try!
