Orange Cilantro Chicken

I don’t know about you, but I cook chicken a few times a week, and I am always on the hunt to make something different and not the same old recipe.  I like this one, because its so easy, has hardly any ingredients, and it tastes great.  I got this recipe from Fitness Magazine.  I also learned a few more things about coriander.  Did you know that coriander is a spice that is made from the seed of the cilantro plant?  The seeds are small and round with a brown or yellowish color.  Both the seeds and leaves of the cilantro plants are edible, but they have very distinct flavors.  Coriander has a light and fresh flavor, tinged with lemon.  It is commonly used  in curries or in Asian cuisine and is often combined with ginger.  Cilantro leaves have a very pungent flavor; people generally love or hate the taste of cilantro.  You can buy the coriander seeds with all the other spices in the store.
Ingredients
2  4-oz skinless, boneless chicken breasts
1/4  tsp crushed coriander seed (I used my Magic Bullet to crush them)
1/2  cup orange juice
2  tbs snipped fresh cilantro
  Cooking spray
  Salt and pepper
Directions
Spray a nonstick pan with cooking spray.
Saute chicken breasts with coriander seed over medium-high heat until browned, 2 to 3 minutes per side.
De-glaze pan with orange juice. Reduce heat; simmer 5 minutes, or until chicken is cooked through and liquid is reduced.
Season with salt and pepper to taste; add cilantro and cook 1 minute more.

I made this with a side of sugar snap peas sauteed with a little sesame oil and chopped garlic and a small baked potato.
