Mark’s chicken/great grocery store purchases!

The Grocery store I go to sometimes called Caputo’s has probably the biggest fruit and veggies section I’ve ever seen. It’s amazing! Underneath some of the fruits/veggies on the floor are big boxes of things that need to be sold that day. I scored with 2 great things. I got this GIGANTIC box of tomatoes for $1.50!!

I got this big box of bananas for only $2.00!! What I did with these, is peel them all, put them in ziploc bags and stored them in the freezer. Then I can add them to smoothies, make banana bread, muffins, add them to pancakes. Christina, can you believe that?

With the tomatoes, I used some to make a batch of salsa

Once in the blender I add a tsp. of salt, a squeeze of half a lime and Tapatio Hot Sauce.


With the rest of the tomatoes, I washed them all really well, then placed them in the oven with a white onion and a whole head of garlic.

I baked them at 350 for about an hour. *Cooks tip: they release a lot of juice, so use a jelly roll pan or 9×13 pan OR put a cookie sheet underneath to catch the dripping liquid.

Then in batches, I put all those ingredients (taking the paper off the garlic first) and pureed them all and placed them in the biggest stock pot I owned. Then I added dried oregano, dried basil, salt, pepper, crushed red pepper flakes and I made a TON of pasta sauce.

I love getting finds like that!

Mark’s Chicken

Mark is my son, he is 12 years old. Over the weekend he was looking to make something for lunch. He was looking for what he could make, when he asked if he could make chicken with his special sauce. I agreed and he got to work.

At one point he turned around and said “Wouldn’t this be a great picture for your blog?”

It actually turned out pretty good!!
