Healthy in a Hurry – Turkey & White Bean Chili
I’ve been going through binders of recipes I’ve copied from magazines, or gotten from friends during my time off from work over the Holidays. I wish I could get paid for reading cookbooks/recipes I would be a millionaire!!
During the fast paced Holidays and people having extra days off for The New Years, here is a great quick recipe from Good Housekeeping Magazine!
Turkey & White Bean Chili
This recipe makes 6 servings and each serving is 380 calories, 13 grams of fat and 10 grams of fiber.
Ingredients:
1 TB. Olive Oil
1 LB. ground turkey (93% lean)
1 medium white onion, chopped
½ tsp. of salt
4 tsp. chili powder (or more depending on your taste!)
1 TB. ground cumin
1 28 oz. can of diced tomatoes (with their juice)
1 15 oz. can of white kidney beans, rinsed and drained
Directions:
In a 12 inch skillet, or stock pot, heat oil on medium heat until hot. Add the turkey and ½ tsp. of salt and cook for 6-8 minutes or until the turkey loses its pink color throughout, stirring to break up the meat. Add the onion and cook for 4 more minutes. Stir in the chili powder and cumin, cook 1 more minute.
Add the tomatoes with their juice, the beans, and 1/3 cup of water; heat to boiling on high. Reduce heat to medium and cook, uncovered for 10 minutes, stirring occasionally. Ladle chili into serving bowls and top with a dollop of fat free sour cream, or plain yogurt.
Now, my husband makes a wicked chili, but he only makes it a few times a year, so in between those times, I can enjoy my own kind of chili. This would be great to make on a busy night, or make a pot for yourself and take it for lunch every day!
