Healthy Hot Chocolate!

It is so cold today in Chicago.  The actual temperature is -10 with wind-chills at -25 to -30 below!  What’s with that???  So, needless to say, you need something warm and cozy to keep you warm all day.  I have this fantastic product my husband gave me called a Cocoa-Latte machine.Basically, you can put all the ingredients in the machine, hit a button and it swirls the hot chocolate mixture around and heats it up at the same time.  I’ve only used it to make hot chocolate, but you can make latte’s, or chai teas, or other coffee drinks.  The best part is you can make just one cup or enough for your whole family.  My kids have learned how to make it by themselves now, so when they come in from playing outside, they get all excited about making hot chocolate. It automatically stops when it is heated to the right temperature, and there is a froth button on the side that will make it frothy when you dispense the hot chocolate.  This recipe comes from a cookbook I purchased from Dotties Weight Loss Zone.  It’s super easy to make, you can make it on the stove, as the following recipe states, or if you are lucky enough to have a Cocoa-Latte machine, just throw everything in there and turn it on!
Low Calorie Hot Chocolate
Ingredients:
2 cups skim milk
1/4 cup unsweetened cocoa powder
1/2 cup Splenda
1/4 cup water
1 tbsp sugar
3 tsp cornstarch
Directions:
Mix the cocoa powder, Splenda, and sugar together in a medium saucepan.
Combine the cornstarch with the water. Add the mixture to the cocoa powder mix and blend until smooth.
Put the mixture on medium low heat. Gradually add the milk, stirring constantly.
Bring the chocolate mix to a simmer. Let it simmer for 10 minutes, stirring it often.
When the hot chocolate becomes smooth and thick it is ready to serve.
