Easy homemade pizza!
It’s kind of nice to make something a little more deluxe. I hadn’t gone to the store yet, so I decided to make homemade pizza with whatever I could find in the fridge.
I had leftover chicken sausage, so I sliced up a link of that. I LOVE this brand of chicken sausages. They have a bunch of different flavors. It’s usually by the packaged meat and Jennie-0 Turkey store products.

I had no pizza sauce or tomatoes, so I used barbecue sauce as my base. I also didn’t have that much cheese, so I combined a little taco blend cheese and Muenster cheese. It turned out awesome!
I made my sister’s no rise pizza dough which couldn’t be easier.
1 cup warm water
1 package of yeast
2 cups flour
In a glass measuring cup measure 1 cup of warm water, add the yeast packet and let it sit for 5 minutes. Then just mix that with the flour for about 5 minutes with a dough hook, or if you don’t have a mixer like that, you can just knead the dough by hand.
3 oz. of this dough is only 150 calories, and I like to roll it out pretty thin so it seems like I have more pizza. I rolled out the dough and baked it at 400 degrees for 5 minutes. After that, I just spooned the bbq sauce to cover the dough, added the chicken sausage and 1 ½ ounces of the cheese.
This whole huge pizza was only 510 calories! I would have eaten the whole thing, but after eating half, my oldest son woke up (at 11:00 a.m.) and asked if he could have the rest, so what’s a Mom to do? I gave him the rest.
