Crunchy Breakfast Tacos

I have a YouTube channel! Building it day by day – but here is probably one of my favorite breakfast ideas! Crunchy breakfast tacos!

I fill them with various things, based on what I have on hand. This version I added 1 egg, peppers, turkey pepperoni, 1/4 leftover rice, 1/4 cup Trader Joe’s Mexican Cheese blend cheese.

If you are lucky enough to live in the Chicago area – the corn tortillas I use are from a brand called El Milagro. They are sold at Target, Walmart, Jewel Foods. They cost .45 cents a package. I don’t recommend buying on Amazon, some are selling 12 packages for $30! An alternative would be Mission Brand extra thin corn tortillas.

I cooked all the filling in a small skillet. Heat the corn tortillas in the microwave for 30 seconds. This helps them not to tear. Divide the filling between all 3 tacos.

Spray the skillet and outside of the tortillas with cooking spray. I love Chosen Foods Brand Avocado oil.

Cook on the lowest heat – and this is where you need patience – 5-7 minutes per side! It takes that long for it to really crisp up. And because it’s on the lowest setting, I promise it will not burn!

All three of these tacos are 6 smart points on Weight Watchers. I am following the blue plan.

I recently made crunchy tacos for my lunch -using black beans, corn, peppers, onions, garlic, cheese and taco seasoning for the filling. Also super delicious! And the next day for breakfast I had the leftover black bean and corn mixture over polenta.
