Crock pot chicken tacos/getting back to basics
What you need:
3 chicken breasts, boneless and skinless
rub(recipe to follow)
1 jar of your favorite salsa
fixins to go with the chicken: tortillas, lettuce, cheese, black beans, hot sauce, etc…
My rub was 1 TB. chili powder 1 TB. cumin, 1 tsp. salt, 1 tsp. pepper and 1 tsp. sugar, 1 tsp. garlic powder. Rub that all over the chicken.
Next, place that chicken in the bottom of your crock pot (FYI I have also used frozen chicken too and that works as well!).
Add the jar of salsa, turn the crock pot on and cook on low all day.
When you get home, the chicken will just fall apart.
And serve with your favorite fixins!

No onto getting back to basics. I’ve been reading a lot of common themes across the blog world right now. People who are trying to lose weight are upping their efforts RIGHT NOW, not waiting until January to get going again. My sister is doing it, Helen is doing it, and I am going to do it to.
So, for now I am counting points again. Not officially going to meetings, I went to weight watchers long enough and even worked there after making goal, so I know what to do. For those of you who don’t know, in 1999/2000 my sister and I did weight watchers and I lost 65 pounds to get to my lowest adult weight of 132. I kept between that and 140 for about a year before getting pregnant with my third child, my awesome daughter Claire, but in the process I gained it all back! Luckily I’ve lost some of that, but in order to really get to my goal I know this has to be an every day priority.
I know what works, and one thing is writing down what I eat. You can’t lose weight if you don’t know what’s going into your body. Now I don’t just have any notebook to write down what I am eating, I jazz it up!
And, I have stickers too, to put in it when I stay on track. I get them from a local parent/teacher store. They say “Great job” “Awesome”, “Super”.

Decide what you want, decide what you are willing to exchange for it, establish your priorities and get to work.
