Beef Stew, Rachel Ray style, in 30 minutes or less!

 

 

I love beef stew!  It is so hearty and wonderful.  I have a super easy recipe, which I have posted before, but this time I made it the Rachel Ray way and made it in under 30 minutes.  I mentioned that my power was out for several days due to a storm, and I hadn’t had a chance to do a whole weeks grocery shopping, so I went to the store just to get enough ingredients to make this dish.  

 

  • 3 potatoes
  • 1 bag of carrots (I used 4 carrots)
  • 1 bag of celery (I used 2 stalks)
  • 1 onion (I used half)
  • beef stew meat (about 3/4 pound)
  • 3 cans V-8 juice (you can use the spicy hot V-juice too if you want!)
  • splash of hot sauce

By the time I got home it was already 6:30, so I decided to peel the potatoes and carrots and celery and placed them in a plastic bowl, filled it with water and put it in the microwave for 15 minutes, so they would be tender enough.  I sauteed some onion in a stock pot, added the beef stew meat (which I coated with flour to make it tender) I drained the vegetables, put them in the pot, poured the 3 cans of V-8 juice in and that’s it!  Cook it on low/med. heat for about 30 minutes.  I think after dinner, with me and my husband and 3 kids eating it, I had like one serving left over. It’s super healthy and a meal you will make again and again because it is so easy!
