I revamped a recipe I saw from Julia @ Delight.Fuel.com. I changed her recipe up a bit to make it lower in calories or points if you are on Weight Watchers.
Spray muffin tin with cooking spray. Add to muffin tin, I got 11 muffins
Place 1/2 teaspoon of peanut butter on top of each muffin and make swirl with toothpick.
Bake in a preheated oven at 350 for 15-18 minutes.
Let cool for 10 minutes before removing from pan.
Notes
The original recipe called for coconut oil. I didn't have any, but recently purchased a product called Eat Wanna Date - chocolate date spread, and thought that would be a good replacement for the fat. And it worked! 2 tablespoons of the date spread is only 50 calories.
